Additional Information: Fructooligosaccharides (FOS) are non-digestible oligosaccharides which are mainly composed of 1-kestose (GF2), 1-nystose (GF3) and Fructofuranosyl nystose (GF4) in which fructosyl units (F) are bound at the ß-2,1 position of sucrose (GF). FOS can be produced by the transfructosylation of sucrose using the enzyme Fructosyl Transferase (FTase). In the present study, Aspergillus oryzae MTCC 5154 and Aureobasidium pullulans CFR 77 were used for the production of FTase. The FTase produced was incubated with the substrate, sucrose in the ratio 1:9. Yield of FOS was found to be 56% of the initial sucrose concentration due to the feedback inhibition by glucose. The feed back inhibition by glucose can be overcome by efficiently remove the excesss glucose. In the present study the yeast Saccharomyces cerevisiae is used to produce high-purity fructooligosaccharides. The FOS yield could be enhanced upto 96% FOS in a period of 28h. Hence this method was determined to be cost- effective way of producing high purity fructooligosaccharides.
