Additional Information: Garcinia is a large genus of polygamous trees or shrubs, distributed in tropical Asia, Africa, and Polynesia. Isolation of (-)-HCA from Garcinia has been extensively studied due to its regulatory effect on lipogenesis and weight loss. HCA is proved to be a potential anti-obesity and antioxidant agent. However, the hygroscopic nature of (-)-HCA prevents it from remaining in powder form and reduces its shelf life. Hence it becomes inevitable to microencapsulate the acid in a suitable wall material In this study, the microencapsulation of Garcinia fruit extract was carried out in whey protein isolate with different core-wall ratios and the effect of process variables (outlet temperature and flow rate) of the spray drying process on microencapsulation were studied. The microencapsulated products were analysed for their moisture content, microencapsulation efficiency and antioxidant properties. Also the spray dried powders were incorporated into pasta dough and further antioxidant analysis was carried out both before and after cooking.
