Abstract

Rats given raw green beans (Dolichos lablab) lost weight and net protein utilization (NPU), estimated from body nitrogen, was negative compared with 7.32 and 11.4 for bean meals washed with 80% ethanol and 0.05 N HCl, and 65.9 for casein. Raw, ethanol-extracted and autoclaved meals had true digestibility 50, 73 and 83, biological value 15.1, 36.9 and 55.1 and NPU, estimated from N balance, 8.8, 27.6 and 45.9, respectively.
