Abstract

Carbohydrate fractions were isolated from beans (Lablab purpureus) and ragi (Eleusine coracana). Adult Wistar rats were given diets with whole beans or ragi as carbohydrate source (65%). All isolated fractions were incorporated at values present in 65 g of whole test materials replacing maize starch in the diet so that percentage incorporations were for beans, pectin 0.65, hemicellulose 2.9, cellulose 4.6 and starch 27.4, and for ragi, cellulose 3.9, hemicellulose 1.3 and starch 39.0. Excretion of fractions of bean and ragi in faeces showed a similar pattern. Percentage excretion of fractions increased in the order: starch, pectin, hemicellulose and cellulose. Nitrogen in faeces was high in diets with whole bean and its hemicellulose, cellulose and starch fractions and with whole ragi. Excretion of calcium was increased only by whole bean.
