Abstract

Bacteriological standards for imported sea foods are based on data obtained from temperate regions. However, the microflora of tropical sea foods are known to be very different. Black tiger shrimps (Penaeus monodon) grown in tropical aquaculture were sampled throughout the farming period and at harvest for the prevalence of Listeria, Salmonella and Vibrio spp. Samples of pond water, sediment and feeds (formulated feed and clam meat) from the farm were also examined. Vibrio and Salmonella spp. predominated throughout the culture cycle and at harvest and were also present in all environmental samples. V. cholerae was detected in all samples, but at a relatively low level compared to other species. In contrast, Listeria spp. were only detected in shrimps and sediment at harvest and in clam meat. Correlation between the incidence of these pathogens and coliforms (used as indicator organisms) was poor. It is concluded that Listeria, Salmonella and Vibrio spp. are a natural part of the microflora of shrimps grown in aquaculture and, as a result, it is suggested that there is a need to review the present bacteriological standards for shrimps.
