Abstract

Storage studies on an almond milk powder mix, comprising skim milk powder, cane sugar, starch, almond, cardamon and food colourants, were conducted using 4 types of pack (pouches made of polypropylene, polyester and polyethylene, or metallized polyester and polyethylene, and HDPE rigid containers). Storage conditions were 38C with 92% RH or 27C with 65% RH for up to 180 days. Chemical, microbiological and sensory qualities of the almond milk powder mix were assessed. Shelf life of the mix was 20, 30, 65 and 90 days in polyester and polyethylene, polypropylene, metallized polyester and polyethylene, and HDPE packs, respectively, at 38C and 92% RH; it could be stored for >6 months at 27C and 65% RH in all the packs.
