Abstract

The article deals with the processing and utilization of oilseeds and oilseed cakes in India as vegetable protein food. Work done on individual oilseeds like groundnut, sesame, cottonseed, mustard/rapeseed, coconut, sunflower and soybean are summarized. Other aspects considered are vegetable protein-based beverages and extrusion cooked foods from oilseeds.
