Abstract

The cost factor involved in the selection of driers, use of direct contact driers for drying vegetables, spices, ready mixes, and coconut gratings and kernels are discussed. Copra driers, spray driers, fluid bed driers and pneumatic driers are among the contact driers described. Indirect contact driers and use of solar energy in food dehydration are also covered.
