Abstract

Data are given for vitamin concn. in mushrooms of the spp. (i) Pleurotus flabellatus, (ii) P. eous, (iii) P. sajor-caju, and (iv) P. florida, cultured on rice straw. Mean values for (i), (ii), (iii) and (iv) were, resp. (dry wt. basis): ascorbic acid 144, 92, 111 and 113 mg/100 g; thiamin 1.46, 2.23, 1.75 and 1.36 mg/100 g; niacin 73.3, 66.6, 60.0 and 72.9 mg/100 g; and folic acid 1222, 1346, 1278 and 1412 mug/100 g. These data are compared with data for the genera Agaricus, Auricularia, Lentinus and Volvariella.
