Abstract

The preservation of fruits and vegetables by drying is perhaps the oldest method known. Nowadays, although considerable quantities of fruits and veget:JHes are dried in the sun, the modern method of dehydration, with controlled conditions to give a product which on the addition of water regains its original form and remains lalatable and nutritious, is growing in importance. rhe dehydration industry got an impetus during world War II in different parts of the world and has retained its place even during post war years in meeting the needs of the civilian market in western countries.
