Abstract

Calcium caseinate was prepared in a novel manner by using calcium hydroxide in sucrose solution as the calcium reagent. The reaction proceeds in a homogeneous phase, and therefore is fast and smooth. Details of the procedure are described,and also the properties of the preparation.
