Abstract

Rice has been traditionally classified in India, for the purpose of marketing, into superfine, fine, medium and coarse. But, despite various attempts, this classifiution has been largcly based on arbitrary criteria. It is shown that a rational classification requires a single. uniform scale formed by a suitable mathematical derivation from the three parameters, L (length), B (breadth) and w(grain weight). Surface area per unit weight (S.cm2/g) is one such derived parameter which can be an ex cellent basiS of classification; the larger its value, the finer is the grain. The grain weight (W) alone gives a slightly less accurate but rough and ready basis for c1assificalion (in the inverse order).
