Additional Information: Ethnobotanically Indian borage (Plectranthus amboinicus) has a great importance mainly with medicinal value. The antibacterial, antifungal was determined by agar diffusion assay with four different extracts namely crude extract, aqueous extract, ethanolic extract and essential oil. The Indian borage essential oil (IEO) showed maximum inhibitory effects with respect to bacterial and fungal species. Emphasis was laid on application of IEO (Indian borage essential oil) in food sample resulted in apparent inhibition of the growth in food system such as maize, poultry feed and groundnut and no detectable amount of ochratoxin A (OTA) was found with moisture of 30% even after 7 days. IEO is also observed to be natural antioxidant, which was determined by Radical Scavenging Activity (RSA) by DPPH method. The scavenging was high in essential oil. The bioactive phenolic compound carvacrol is a major component present in IEO, which is responsible for antimicrobial activity. Thus, IEO is a potent antimicrobial and antioxidant agent can be used for food preservations.
