Additional Information: <p align="justify">The present study was carried out to optimize the reaction conditions to enhance the percentage of 12:0, 16:0, and 18:0, in coconut oil employing chemical interesterification method. Oils have unique fatty acid profiles, which determine their nutritional, chemical and physical properties. Chemical interesterification has been used as an efficient tool for the modification of fatty acid composition of fats and oils.</p>
