Additional Information: A machine to be successfully equipment we need a detail study of the aspect such as the moving part of the machine. What are the constraints that arise during the development of the machine must also be considered. Extrusion cooking is defined “as the process by which moistened, starchy and protenacious material are plasticized and cooked in a tube by a combination of pressure, heat and mechanical shear”. We are now designing a single screw food extrusion cooker, which are used to produce curls as its main products. Single screw extrusion cooker is a machine in which the material is fed at one end of the screw and is moved through the profile of the screw with speed of the screw. In the process the material moves from one end to another with supply of heat. The material is cooked in the extruder with the presence of the moisture content in the material. The material used in the process is maize flow which is used to produce snack food such as curls, breakfast cereals, breading, corn flake etc., when even corn floor is extrusion cook the extrude is gelatinized and is given a new texture, a new structure accompanied with great increase in water uptake and velocity. Considering the above details, we have trialed to design the machine which is used to extrude curls out of maize floor. It is essential that material used in the design of the food processing machine need to have characteristics like resistance to high temperature, high pressure and resistance to wear, and to resist its self weight and other constraints. Considering the above requirements and properties the material is selected. Care has to be taken that the main constraint such material feed and heat supply is kept constant to maintain the quality of the product.
