Abstract

Dates are a good source of nutritional and bioactive compounds and available in several forms such as fresh dates, date paste, and date syrup in the market meant for different applications. However, dates powder would be highly beneficial in improving shelf-life, ease of handling, and blendability with various foods prepared domestically and in industry. Naturally healthy (NH) beverages are a category among health and wellness foods (HWF) which is witnessing a steady growth. A dates-base beverage mix, with its inherently nutrient rich and energy dense qualities, particularly iron, would not only make an ideal NH beverage but also help in tackling the widely prevalent problems of anaemia, hidden hunger and malnutrition.
