Considering the health and the life style pattern, a cheaper, safer method to enrich food products with the encapsulated green coffee extract is developed. Also the extract exhibited higher radical scavenging activity. Thus, the newly developed product would contain rich amounts of natural antioxidants and could be easily made bioavailable to the human system.
