Additional Information: In recent years, vanilla trade is gaining importance particularly with respect to the flavour quality. It has been shown that the quality of vanilla beans exported from India does not favorably compare with that of other major exporting countries. In view this there is an urgent need for establishing a systematic approach for the flavour evaluation of vanilla pods. The methodology so developed will be of immerse help in comparing the quality of vanilla pods or vanilla extracts produced in different regions of world. Studies on flavour research have shown that mere instrumental analysis of flavours or flavouring components does not reflect the true impact of the food product quality. Sensory evaluation of food flavours give a realistic opinion about the likes and dislikes of a particular flavour. It has been suggested that to obtain overall quality appraisal of food flavours it is essential to have a judicious blend of both instrumental and sensory analysis. In this investigation work an attempt has been made to carry out flavour evaluation of vanilla pods and vanilla extract. There is a need to understand the genetic composition of Indian Vanilla plants so that the required genes for desirable features may be altered to bring about desirable changes in the final material, be it the plant itself or the bean characteristics.
